28 days!

28 Days to go!!

This is a short post! I ordered Zumba. I did Zumba today. My husband and I enrolled for insurance through his job, thats exciting, I feel kinda grown up.

I'm super tired today. I didn't make it up at 5 am, it just didn't happen. But there is always tomorrow, because I'm soooooo tired!! I'm going to read a little and go to bed as soon as I get done with this post. Wonder why I'm so tired??

Tasty Tuesday! Shepherd's Pie

Another day another way to lose weight!

Okay I worked out today! Very happy! It was only 20 minutes, but it totally fit into my day. I meant to get up at 5 this morning and work out, but I was just too darn tired. So I hit the alarm, and turn on the 6:00 alarm.

My big debate of the night is this... do I want to buy the Turbo Fire workout from Beachbody and use it for my workouts. I'm scared of a couple of things, 1. that it's not tailored for people who are as over weight as I am 2. that I'll hurt myself 3. that I'll get frustrated because my body won't do what I want, and I'll spend 130 dollars for nothing. 4. its just a lot of money to spend on working out! So I decided to hold off on it. I want to get it, but I want to do it when I need a boost, when I get to the point in my weight loss when I am on a plateau and I need help.

I decided instead to go ahead and buy the Zumba dvds, I have it on my Wii right now, and I want to mix it up with some other workouts, because I need some variety. I LOVE Zumba, it's just like dancing, I don't feel like it's a workout, just like it's fun. I actually look forward to it. But until I get my DVDs, which I'm ordering as soon as I get done with this post, I'm going to do it on the Wii.

Tomorrow I WILL get up at 5 so I can do my 45 minute Zumba, today was only 20, because I didn't have the time for it.

Okay tonight I'm going to borrow another recipe that we did from Thindulge, but I mixed it up because there are just some things that I refuse to change, and some things about the recipe that I didn't like. So head over there if you want the original, but this is my version.

Sheperd's Pie

Ingredients:

For the Potatoes:
1 pound Yukon gold
1/2 pound cauliflower
5-6 oz of fat free evaporated milk
4-5 table spoons of butter
Salt and Pepper to taste

For the Meat filling:
1 onion, chopped
2 carrots
2-5 cloves of garlic (LOVE garlic, use as much as you want!) minced
2 pounds of ground beef- fat drained off
salt
pepper
1-2 table spoons of flour- if you want whole wheat use it, if not use regular, its only 2 tbsp
2 tsp tomato paste
1 cup chicken stock
1 tsp Worcestershire sauce
2-3 teaspoons of fresh rosemary leaves chopped (use the real stuff here, it makes a HUGE difference)
2 teaspoons of fresh thyme leaves, chopped
1/2 cup frozen corn
1/2 cup frozen peas

Preheat oven to 400 degrees

Cut the potatoes into 1-inch dice. Place in a medium saucepan with cauliflower  and cover with cold water. Set over medium high heat and bring to a low simmer. Add a generous amount of kosher salt and keep over a low simmer for 40-50 minutes, until fork tender.   Drain the potatoes in a colander and mix in mixing bowl or with electric beaters/mixer.  Add some of the milk and butter mixture until the desired consistency and flavor is reached. (You may have some leftover and that’s OK). Add salt and pepper to taste. The texture may be strange, but don't be fooled, it tastes great


While potatoes are cooking prepare the filling. Heat the pan to medium high. Cook the beef until brown, drain off all of the fat. Please drain your fat off, blah who wants nasty fat floating in their dish, even with a 90-95% lean ground beef, you will still have fat, so drain it off! But save some to sauté your carrots and onions.


 Set aside beef and cook onions and carrots and garlic in a teeny bit of beef fat for about 3-5 minutes or until tender. Put beef back in pan, add stock, tomato paste, Worcestershire, rosemary and thyme and sprinkle flour over beef. Cook until the stock has cooked down and the flavor has developed- about 10 minutes. 


Add corn and peas to the beef and CHECK seasoning- I needed a little more rosemary and thyme and salt. Spread evenly into a glass dish whatever size is best we used a 9x13 and cover the top of the mean with the mashed potatoes, try to get it at the edges of the pan, it's supposed to create a seal, but it still bubbled up for us, just more yumminess in the potatoes. Cook for 25-30 minutes. If your potatoes aren't browned, set the broiler until you have a nice crusty top, we did ours for 3-5 minutes. Remove and let cool for 10-15 minutes. 


We couldn't wait 10-15 minutes to eat, so we just dug in, it was piping hot, but oh so yummy, this was a HUGE hit with the whole family, and stuck the to ribs, just like it should.

That includes butter (Paula Dean!)- I wanted just enough to get a taste for my recipe. Because potatoes need a nice buttery flavor, part of that is the yukon gold potatoes, the other is Butter.

Okay- it even tells you all the stuff that's not in real butter. Do you really want to put all that shit in your body? I know I don't. Why the hell do you need Tapioca in butter? It even needs to be colored, the COLOR isn't natural!!! 


Okay there ya go, that's why this bother's me. Which is healthy? Straight from a cow? Or f-ed up butter stuff?

I go cow. Just remember everything in moderation!!

Okay I didn't expect to cuss, but I feel very strongly about this. Please please do research on the things you put in your mouth!! Besides checking to see what fat, calories, etc. is in your food, you need to look at the ingredients too!

3 Pounds down!!

I did it... yesterday! I weighed yesterday because I knew with the super bowl that I would be eating more sodium, and I wasn't disappointed.. defiantly overloaded on sodium. Bleh, I can even taste a difference in the salt. But I have lost the 3 pounds that I wanted. So 10 pounds down! I should feel more excited, but I still look at myself and I can't tell a difference. Which is frustrating. But baby steps... thats's what I keep telling myself.

Like I said, I can't tell much of a difference yet, but I'm just happy that I've lost 10 pounds! Here is my new picture...


My mom says she thinks I look trimmer on my sides, its probably from all the Zumba. I have gotten to the first 10 pounds, my reward was Super Bowl Sunday, which was super tasty! My next goal is to work out every day for 21 days. I hate working out on the weekend, but I think that this is a challenge that I can do, but I really need it to get my head to work out, I'm so bad about putting off a work out. So I am going to do this for 21 days, that's almost a whole month. (I should just go for a whole month) So a whole month it is!! 

And that starts tomorrow!! 

So tonight dinner was amazing I made Cheesy Enchilada Soup- I'm going to give you the link to my new favorite blog! Thin Dulge! Talk about awesome!! This was 7 ww points! How awesome is that? I uploaded a picture, its not nearly as good as his picture, but it conveys the yumminess of the soup-

The Big game Sunday!!

So today I was super busy! I got up, watched some Ruby and ate breakfast. I weighed in a day early... but I'll wait till tomorrow to share what the news is.

I decided to go out and ride my bike today. When I had lost about 40 pounds before my wedding, I rode my bike all summer and I really missed it. It was great, I could go about 7 or 8 miles. Sadly today I could tell that I was really out of shape, and I think that I will be really sore tomorrow, but thats okay. I hate having the same workout all the time. Its always nice to shake it up. Despite the fact that it was 48 degrees today, I went out anyway. I wore black leggings with long johns under it, when I went skiing years ago I had these awesome long johns and they are stretchy, so by some miracle, I can still wear them! And they are skin tight and are good under leggings. I also wore a t-shirt and a big sweater. One day that sweater will be big on me. Anyway, it was coooold!!! Despite all my efforts to stay warm, its not like jogging where you are running and making the wind, its the wind from the bike that makes it bitterly cold.

I only went 4 miles, which I kept track of here with an app I got on my phone called map my run. Its cool, it shows my route, how long my route was, average speed and distance. I like to know what I've done. It wasn't anything like I used to go. About halfway into my old bike route, my legs started getting tired, so I just turned around and went back, I only went about 2 miles out, only to have to come back, which made it 4. I'm just very happy that I got out there and did it.

After I got done with that my grandpa and I put together my wedging table!!! I'm super pumped that I did it! Papa hammered everything but 4 nails, I tried to hammer more, but its hard to tell your 80 year old Papa to take a break, so the 4 nails that I did I snuck in. So we got everything done but the bottom, the shelf and putting the plaster in. I'm really proud of us!!

I didn't have time to eat lunch, so shame on me because I was so jittery after my bike ride, after having to pump up the tires, and then having wobbling legs and all that hammering- i forgot to mention that the nails were like 5 inches...- I was so hungry for dinner! And my brain was so fuzzy that I couldn't remember what I wanted to make for dinner for the game!!

All in all we had an amazing Game Day dinner: 

Roasted Cauliflower (my new favorite veggie)
Baked Fries with Parmesan 
Baked Chicken strips (OMG so to get my bread crumbs to stick I used a little butter milk and also some plain greek yogurt, it was amazing!)
Spinach Artichoke dip- which I'm going to give the recipe for
Skinny cow ice cream! 

Fun Spinach Artichoke dip!

1 small onion- chopped
1 package of spinach- water drained
1 can of artichoke hearts
1/4 cup fat free sour cream
1/4 cup Neufchatel cheese
1/4 cup plain greek yogurt
1 tsp garlic powder
3/4 cup mozzarella cheese
pinch of salt and few cracks of pepper

preheat oven to 400

Blend it all together in a food processor or even just mash it up by hand if you like it chunky. Put it in a glass pan and bake until golden on the top. Serve with pita chips or tortilla chips!!

Plans and Goals

Tonight I am going to dedicate this post to typing out some of my weight loss goals. Things that I want to be on track for and my plans for the first couple of months of weight loss. I've been debating putting this up, but I figure that it is something important to share, because having short term and long term goals are very much apart of this journey.

I want to lose 2 pounds a week- So that's 8 a month. I'm going in 10% increments rather than 10 pound increments.

April 7- 1st 10%- Lost 27 pounds- Total Weight: 251 pounds

June 30- 2nd 10%-Lost 25 pounds- Total Weight: 225 pounds

September 15- 3rd 10%-Lost 22 pounds- Total Weight: 203 pounds

November 24- 4th 10%-Lost 20 pounds- Total Weight: 183 pounds

December 29- 5th 10%- Lost 18 pounds- Total Weight: 164 pounds

February 23- 6th 10%- Lost 16 pounds- Total Weight: 148

April 13- 7th 10%-Lost 14 pounds- Total Weight 133

May 7th 1213- My Birthday!!- Last 8 pounds for a total weight of 125!!!

I know that there will be plateaus, some weeks where I don't lost anything. Times when I get off track. I would be fooling myself to say that that's not going to happen this time. But with the blog and the knowledge that I am holding myself accountable to this change for so many reasons, I know I can get there and I can do it.

I can already tell differences in my body. My clothes are a teeny bit looser, when you can't button your pants, but refuse to buy a bigger size, any small difference matters. I feel healthier. This morning I even got up at 5 and worked out with my mom. It wasn't the best workout the world, but I did get up and get moving. It took about 6 cups of tea to wake up though. I drink tea all morning, I just make a big pot of it at work and drink my way though it in 16 oz increments. I love tea, I love having something to drink during the day that isn't just water. I don't put sugar in there, but maybe I'm just a caffeine addict. I can't drink coffee though, because it messes up my stomach.

I don't have a picture today, but I am going to work on the layout of the blog, so maybe tonight I can do some remodeling!

Tracking my food!

Quick post for the day. I just wanted to post and say that I WILL do my recipe for this week.

In my quest to lose three pounds for this week, I started really counting calories, and the first day I really did it was today!! I never thought I could stay under 1900 calories, but I did! I think I probably ate around 2000, there might be something I'm missing. But I recorded as I went and I ate 1810. I wasn't hungry at all today.. I hope I didn't eat too little!

I'm off going to bed early so I can get up to workout at 5... which is way too early! But I HAVE to workout tomorrow. I did workout today for like 50 minutes doing Zumba.
